Butchery Program:

Do you take special orders?

Yes, we do! To check product availability and place your order, please call the shop directly at (206) 708-1400. Since we operate a whole-animal program, some items may sell out and we want to ensure we provide you with accurate, real-time answers. Special requests may take us a few days to fulfill, so be sure to call with plenty of lead time if you have an important meal or event coming up.

What’s so special about whole animal butchery?

Whole-animal butchery is essential for sustainability and ecological farming practices. Since each animal provides only a limited number of premium cuts like ribeyes, tenderloins, and T-bones, this approach allows us to honor the entire animal while reducing waste. It also helps us manage pricing, as sourcing from small, local, organic (and above) farms is a priority. By purchasing animals whole, we’re able to bring you exceptional quality at a more affordable price.

Why don’t you always have ribeyes? They do at Costco.

Commodity meat systems may guarantee convenience, but they can’t create more ribeyes per cow—there are only a limited number per animal. Prioritizing premium cuts in these systems leads to significant waste, as many other valuable parts of the animal are underutilized. Whole-animal butchery ensures we maximize every cut while reducing waste and supporting more sustainable practices.

Why is your meat so expensive?

Our meat comes from small, local farms that prioritize low-impact farming methods and cultivate animals on pasture or non-GMO grain. These climate-smart practices can cost significantly more than commodity systems.

Actually, if you compare our prices to Metropolitan Market, Whole Foods or other high-end grocery stores, they’re often more expensive than us and they’re still serving you primarily commodity meat. With us, you’re not just getting exceptional quality, you’re supporting local farms, ethical practices, and meat that truly nourishes you. We believe it’s the best deal in town!

Can I order meat to be shipped?

Unfortunately, we’re not set up to ship meat nationally at this time. It’s a logistical challenge we’re not planning to tackle anytime soon (if ever). We do offer local delivery through our partner, Table22, and we’d always love for you to visit us in Seattle and experience Beast & Cleaver in person!

Why don’t you always have certain meats?

When you step away from the commodity meat system, you also leave behind artificial production schedules. Real animals mate and are born seasonally, which dictates when they’re available.

For example, since we don’t fly lamb in from New Zealand like many others do, you’ll primarily find it in the spring and fall. Similarly, we work with exclusive sources for ducks, and their production is naturally limited. By respecting these seasonal cycles, we ensure the highest quality and sustainability in everything we offer.

Can I get a list of the sausages you make?

While we can’t provide a comprehensive list here, we regularly produce over 50 unique sausages. Our selection rotates based on seasonal ingredients and what’s available through our whole-animal program. Popular choices include British Bangers, Toulouse, Currywurst, Red Wine and Garlic, Italian flavors, and much more! Stop by the shop, sign up for email for a weekly list, or give us a call to see what’s currently available.


Prepared Foods:

Do you offer gluten-free options in your prepared foods?

We sure do! Many of our prepared foods are naturally gluten-free, but be sure to ask a staff member if you have specific dietary needs. We’ll be happy to guide you toward the best options.

Is your charcuterie cooked or raw?

Our made in-house charcuterie is mostly cooked, although we do offer cured meats on occasion. If you’re unsure about a specific item, feel free to ask—we’re happy to explain!

When and where can I get a prepared burger?

Beast & Cleaver is famous for its dry-aged burger packed with bold, beefy flavor. We host a monthly burger popup out of the shop in the warmer months, so keep a lookout on social media for details, or join our email list.

What sandwiches do you offer?

We offer a meaty, butcher shop sandwich Wed-Fri from 11am until we sell out. Our sandwich offerings rotate regularly, but you can expect unique flavors and top-tier ingredients like house-prepared meats, artisanal cheeses, and freshly baked bread. Visit us in-store to check out the current menu or follow us on social media for updates! 

Classes:

Do you offer classes and how often?

Yes, we do! Our classes typically take place on Tuesdays and Wednesdays and cover a range of topics, including pig or beef butchery, sausage making, pâté en croûte lessons, and more. Check out our Tock page for more information and to sign up!

Can I purchase a class as a gift for someone?

Yes, absolutely! You can purchase a gift card from our website to be redeemed for a class at a later date. We suggest giving your recipient our email address (info@beastandcleaver.com) so we can help them book a date that works for them. 

Please note that our class bookings are managed through Tock, while our shop gift cards use a separate system. To avoid any complications, we recommend that you have your gift recipient contact us directly so we can assist them in getting scheduled into a class seamlessly!

Do you sell gift cards?

Yes we do! You can purchase them here or in person in the shop.

Can a gift card be used for the butcher shop, The Peasant, and The Beastro?

Yes! Your gift card is good for any purchase at Beast & Cleaver, including items from the butcher shop, dining experiences at The Peasant, and meals at The Beastro. Whether you’re picking up premium cuts, enjoying a tasting menu, or indulging in our elevated steakhouse offerings, your gift card is good for it.

How can I buy merchandise?

If you’re local, stop by the shop to check out our selection! Our merchandise includes a rotating selection of hoodies, hats, t-shirts, aprons, tote bags, and more.

The Peasant & The Beastro

What days of the week do you serve dinner?

The Peasant is our 5 course set menu with one seating at 7:30 PM for just 18 guests, Thursday and Friday. The Beastro is our elevated steakhouse experience, offering à la carte steaks, small plates, and desserts on Saturday from 6–11pm or Sunday from 5:30–11pm.

When are reservations released, and why are they so hard to get?

We usually release reservations during the first week of each month for the following month. However, email subscribers get first access, so we highly recommend joining our email list for a head start!

Reservations can be tough to snag because we serve dinner inside the shop and can only accommodate 18-19 guests per night. It’s an intimate, exclusive experience, which means seats fill up quickly!

How can I make a reservation?

You can make a reservation via Tock.

What’s my best chance to get in?

Parties of 4 are less likely to book up as quickly as tables for 2, so grab some friends and join us! These spots also tend to move more slowly on the waitlist.

Make sure to join our waitlist as we release spots to this list many evenings.

If you’re dining solo, we often have space for single diners at our chef’s back bar. These seats don’t always show up on Tock, so email us at info@beastandcleaver.com to inquire about availability!

Do I get my deposit back?

Yes! The deposit you paid when booking your reservation will be applied to your dinner total in the form of a credit.

Do you accommodate food allergies?

Due to the nature of our menu, we cannot accommodate strict gluten- or dairy-free diets at The Peasant. For other allergies, please note them in your reservation, and we’ll do our best to make adjustments. Keep in mind that we’re not a full-service restaurant, and our Peasant Dinner is a set menu designed around our whole-animal approach. For diners with strict requirements, The Beastro is more accommodating with an à la carte menu.

What if I have to cancel?

Please email us as soon as possible if you need to cancel your reservation. While we ask for at least 24 hours’ notice, we understand that life happens. The sooner we know, the better chance we have of filling your spot!

How can I see a menu ahead of time?

Because of the seasonal and sustainable nature of our menu, it changes every week. But here is a sample of what you can expect:

Can we book a private event?

Unfortunately, we are unable to accommodate private parties at this time due to the size and nature of our restaurant.

Can I bring my infant or child?

You’re welcome to bring your infant if you can keep them in a carrier seat next to you. Just be mindful of the small space and step out with them if they get fussy to ensure a pleasant experience for everyone.

As for older children, you’re welcome to bring them, but note they’ll need their own reservation and will be served the same menu as everyone else—no chicken fingers or mac & cheese here! For most children, The Beastro offers plenty of options, while The Peasant is more challenging to accommodate.

Butcher Box Delivery (Table22)

What can I expect from my Beast & Cleaver butcher box?

We partner with local Washington farms to source ethically raised, top-quality meats. Whole-animal butchery allows us to prepare unique cuts, dry-age select offerings, and showcase artisanal creations you won’t see at a standard market. Each Butcher Box arrives with a rotating variety of beef, pork, poultry, and specialties like charcuterie or sausages. You’ll also receive cooking tips to help you explore new cuts with confidence.

What are the different box options I can choose from?

We currently offer two main butcher box sizes: The Little Beast (5–6 lbs.) and The Big Beast (9–10 lbs.). Everything is handpicked by our butchers to showcase the best of what’s in season and available from our partner farms. 

What goes into a Beast & Cleaver butcher box?

Each box varies and includes a rotating variety of meats. An example box may include: Boneless Ribeye, Flat Iron Steak, Top Sirloin, Flank Steak, London Royal, Osso Buco, Pork Chop, 1 (8oz) Jar of Beef Tallow, 1 lb. ground beef, and / or other interesting cuts or house-made products. 

Can I add additional products to my butcher box order?

If you’re looking for extra goodies each month, we offer several rotating add-on options such as dry-aged products, sausages, and other handcrafted provisions.

Simply check the add-on options in your Table22 portal before your monthly order processes. Also, stay on the lookout for new and interesting delicacies we’ll add over time!

What are my delivery options? Can I pick up my order in-store?

We currently offer local delivery on a set schedule. You’ll get an email at the start of the month confirming your delivery details, so you’ll know exactly when to expect your box. There are no local pickup options at this time. 

When can I get my goods?

If you sign up within a given calendar month (or have a recurring charge on a given month), you will be eligible to receive goods in the next month. For example, if you signed up in September, the first month you’ll be eligible to receive your subscription goods will be October, etc.

When do I get billed?

After signing up, you can manage your subscription at Table22 Member Portal, where you can skip a month, pause your subscription, cancel or update billing, and other account information with the click of a button!

Why can’t I choose my cuts?

We pride ourselves on crafting a curated, nose-to-tail experience that highlights each animal’s best attributes. Our skilled butchers handpick cuts to showcase unique flavors, ensure nothing goes to waste, and introduce you to a variety of meats you might not encounter otherwise. It’s all part of discovering local, sustainable butchery at its finest—letting you savor new tastes each month. If you ever crave an additional favorite cut, our on-site butcher shop is always open for custom orders. 

Do you provide information on the cuts, including cooking instructions?

Yes! Each month, we include a pamphlet with handy information and resources. From quick weeknight meals to special-occasion roasts, we’re here to help you make the most of your new cuts. Keep an eye on our website or social media for more how-to guides and behind-the-scenes tips.
